Each year, herring lovers eagerly anticipate the arrival of the first new Dutch herring of the season. Early herring are also called 'matjes herring’, which is a corruption of the Dutch word 'maagdelijk (virgin)'. The fish do not yet have any hard or soft roe.
‘Matjes herring’ has a fat content of at least 16%, which gives the fish its smooth taste. Prime examples even have a fat content of 21-22%. In early June the auction of the first barrel traditionally marks the opening of the season.
